I would like to contribute again with NCC in "NCC Banana week". I found this recipe in SEDAP magazine, it is quite unique as the banana baked into cookies. Here is the half recipe that I made.

Ingredients :
A.
50 g Margarine
50 g Hard Butter
1/8 tsp Salt
40 g Icing sugar
B.
50 g Banana, mashed
1/4 tsp Mocha paste
1 Egg yolk
C.
120 g Plain flour
10 g Corn flour
1/4 tsp Baking powder
10 g Milk powder
50 g Cashew nut, toasted, chopped
Method:
- Preheat the oven to 150C
- Whisk “A” around 45 seconds.
- Add in “B”, mixed well. Then egg yolk, mixed well.
- Add in “C”, mixed well.
- Using small spoon to scoop into the greased baking tray and using the back of a spoon, spread it out thinly.
- Bake it for 30 minutes or until cooked.
- Leave it cool.
Banana Mocca Cookies
Black Glutinous Swiss Roll
Ingredients:
A:
7 Egg yolk
3 Egg white
75 g Sugar
B:
30 g Plain flour
25 g Black glutinous flour
10 g Milk powder
¼ tsp Baking powder
90 g Butter, melted
Cream Filling:
50 g White Chocolate, melted
100 g Fresh Cream
Methods:
- Preheat the oven to 200C
- Whisk ingredients “A” at maximum speed till thick and creamy.
- Fold “B” to “A”, mixed well.
- Add in warm melted butter and fold well.
- Pour into grease pan 28x28x2cm.
- Bake for 15-20 mins or until baked.
- Remove from oven, leave to cool before spread the cream filling.
- Cream Filling : Whisk the fresh cream until stiff then add in melted chocolate.
- Roll, slice and serve.
Bakpao Indonesia Style
I miss Indonesia steamed bao, which we call it Bakpao (Steamed Meat Bao). So I tried to make one using the special bao yeast (see below), which I bought from Indonesia. The ingredients and process are not complicated. Proof time was only take 10-15 mins, but as you can see the size before and after steamed below picture are so much different. The skin is soft, even though the bao skin turned out not as fluffy as what I expected to be. Filling is minced chicken. This is my first time to make bao, overall I am quite happy with the result.

Steamed Macha Sponge Cake
When I first saw Blessedhomemaker published this cake, I knew that I'm gonna to try it. Finally, I made it half of the recipe, and steamed it into small cupcakes instead of big cake. This cupcakes are soft and remain soft after the next day.

Ingredients:
A:
2 eggs
90 gr caster sugar
B:
115g plain flour
1.5 heaped tsp matcha
C:
40ml Sprite (or any fizzy drinks)
Method:
- Use high speed beat eggs till fluffy.
- Add in sugar gradually and continue beating till creamy and thick.
- Fold in the flour in 3 portions.
- Add in Ingredients C and mix well.
- Pour in the cupcake till 90% full.
- Steam over high heat for 15 minutes.
Yields : 15 small cupcakes
