Lidah Kucing a.k.a. Cat's Tongue Cookies


These cookies are quite popular back in Indonesia. Why the name is Lidah Kucing a.k.a. Cats Tongue cookies, maybe because of their long and thin shape. :) It’s just like butter cookies, a bit crunchy and easy to make.

Ingredients:
125 gr butter
80 gr icing sugar
½ tsp vanilla essence
50 gr egg white
125 gr plain flour

Method:
- Preheat oven at 180C
- Cream butter, icing sugar and vanilla until light and fluffy.
- Add egg white bit by bit, beat until well combined.
- Fold in the flour, mix well.
- Put the batter into the piping bag, cut the end to made round tip.
- Start piping a long strip around 3-4cm length on the baking papers.
- Bake for about 20 minutes or lightly brown.
- Remove from oven and cool on a wire rack.

NOTES:
Other flavour variation you may create such as mocca, cheese, chocolate, etc.

Lapis Egg White


After Lapis Legit that I baked for CNY, I was trying to get rid of the left over egg whites in the freezer. Search thru internet, got quite few recipes on egg whites. But finally I decided to bake another lapis cake, but this time another good choice of healthy lapis cake. As the cake main ingredient is from egg white, the cake texture is a bit dry, not as moist as the original lapis legit. However, it still taste nice and not too sweet.

Recipe from Tabloid Saji ( shared by whattoeat )

Ingredients:
A.
270 gr Butter
1,5 tsp Condensed Milk ( I put 2 tbsp )

B.
450 gr Egg whites
1/4 tsp salt
2 tsp Emulsifier/Ovalette ( I omit it )
180 gr Caster sugar ( I put 150 gr )

C.
115 gr Cake flour ( I used 120 gr )
25 gr Milk Powder ( I used 20 gr )

Optional:
1/2 tsp chocolate paste ( I used 2 tsp choco powder)
few drops of pandan paste

Method:
- Preheat 200C
- Cream butter till creamy and pale in colour. Add in condense milk, mix well.
- Whisk ‘B’ until soft peak, then add ‘A’, whisk until mix well.
- Fold in ‘C’, mix well using spatula.
- Divide into 2 portion, one mixed with choco powder and the other with pandan paste
- Prepare 8" tray, lined at the bottom.
- Bake the first layer with top-bottom heat.
- Then bake the next layer until the last layer using top heat (I switched to 220C for my oven). Try to bake it each layer not more than 5 minutes or else, the cake will turn hard.
- Use back spoon to press lightly to flatten each layer while you mixed the batter into the tray.
- When finish the last layer, cover with aluminium foil, using top bottom heat bake the cake at 180C for about 5-10 mins.

NOTE:
- I divided all the ingredients into 2 times beating (except for ‘A’), means that I whisked the egg white into two times and also for flour mixing. Once the first half recipe batter was used up, then continue beat for the other half recipe. This is because of white egg batter is easily melted, which can cause the cake turn deflate/hard.
- And for ‘A’ (butter & condensed milk), I did at one go, once ready, just divided into two portion
- To get higher cake layers, I suggested use 6 inch square or 24x10x7cm.

Notes :
- Anncoo's tips: when spreading the batter, spread the centre thinner than the outer side.
- I baked in 200C around 7-10mins

Egg White Cupcakes


Got left over egg white from Lapis Surabaya Swiss Roll, and browsed thru the internet and found this recipe from Peng's Kitchen. I agree with her that this cake soft & fluffy, as you can see from the picture below.


Ingredient:
50gr corn oil
45gr corn flour
125gr egg white
60gr castor sugar

Methods:
- Preheat the oven at 180C
- Heat up oil in a saucepan for 1 min. Remove from heat. Pour in corn flour and mix evenly until free of lumps. Cool completely.
- Beat egg whites on high speed. Add in sugar gradually and beat until soft peak form.
- Fold in 1/3 of the egg white foam into the flour mixture. Mix evenly.
- Then transfer into the balance egg white and fold evenly.
- Pour the batter into individual cake cups.
- Bake in 12-15 mins.

Yields : 6 cupcakes

Here I sliced it into two, and spread with Nutella, then it looks exactly just like bread sandwich. hahahaa ..... yummy :)

White Marble Cake



Got the white eggs left over from Kueh Lapis, then I made this. The original cake's name is Zebra Cake, however, I was too lazy and made the marble effect instead of zebra layers on this cake. Then I rename it to White Marble Cake ;D However, too bad, my chocolate chips sank down to the bottom. :C but the cake is very soft.

The tested recipe shared by Rina Rinso

I only baked half the recipe with the following:
Ingredients:
200 cc egg whites
90g sugar
½ tsp sponge gel
100g butter, melted
80g plain flour (I used top flour)
20g maizena flour
1 tsp choco powder/choco paste/pandan paste/strawberry paste (I used choco paste)

Methods:
- Preheat the oven to 180C
- Whisk the egg whites + SP, gradually add sugar and whisk till stiff form
- Fold the flours into the egg whitesAdd the melted butter until well combined
- Divide the batter into 2 separate bowl, one part put the chocolate paste and leave the other one plain
- Scoop of the mixture alternatively into baking tin, then use a wooden pick to create the marble effect
- Bake in a preheated oven for 20 -30 mins

Note : if you would like to make Zebra effect, then you can scoop 2 tbsp of each colour onto the center of the baking tin. Repeat the process till all the batter are used.
